Hasselback Salami Salad
Mix together:
1/2 cup duck sauce
2 tablespoons each brown sugar, soy sauce and ketchup
1 teaspoon apple cider vinegar
1 teaspoon hot sauce
4 cloves garlic, minced
Salad contains your favorite salad greens and small vegetables.
Hasselback a salami by positioning a pair of chopsticks on either side and making thin cuts across the entire salami, avoiding cutting through to the bottom.
Brush the duck sauce mixture generously on the salami and bake in a loaf tin at 365 degrees covered for 30 minutes, basting once and continue baking for another 20 or so minutes, uncovered. Remove from the oven and baste again.
Add 1 tsp apple cider vinegar and 1/4 cup olive oil to the duck sauce mixture and shake vigorously. This will be the salad dressing.
On a large serving plate arrange your salad, using here - arugula, cherry tomatoes, purple onion and cut off the cob grilled corn. Drizzle with dressing. Place salami on the salad and serve.
