2 Baguette buns
Paste using ground garlic, parsley, olive oil and salt.
Feel free to sub ready made non-dairy pesto sauce.
Variety of deli meats, here using pastrami, corned beef and salami
Beefsteak tomato
Pickled banana peppers
Sliced and minced Iceberg lettuce, thinly sliced
Purple onion, thinly sliced
3/4 cup of mayo
2 T red wine vinegar
1 minced garlic clove
1 tsp each italian seasoning
garlic powder
red pepper flakes
Prepare dressing with mayo, minced banana peppers, red wine vinegar, garlic and dry seasonings in a bowl large enough to mix with the lettuce and onion. To cut the sharpness of the onion, immerse slices in ice water for 1 minute and dry on a paper towel. It really works!
Slice the bun in half lengthwise and spread the surface with whatever topping you choose to use. Toast in an oven or toaster oven for 10-12 minutes.
In whatever order works for you, assemble the grinder sandwich - tomato slices, deli meats, banana peppers and a generous finish of the lettuce salad. Slice and serve soon after assembling as the bread will absorb all those juices. Enjoy!
