Hang 'em until they're hard!
I have two right now, about two weeks apart. After 3-4 weeks, they're nice and hard and so delicious! Whenever my kids are due in town, I make sure we have them hard and ready to slice. We fight over the ends. One time I recorded myself giving part of one end to my dog and sent it to my kids. They flipped out! It was hilarious! I'm reasonably certain my sweet pooch will never have another taste.

New to Kosher Meat
Since attempting to follow the laws of kashrut I have been searching for a salami with the flavor I have been missing. I have now found it.
