Ingredients
1 large pack chicken breast sliced or pounded thin
1 @abelesheymann salami, halved and sliced thinly lengthwise
4 eggs, whisked
1 tbsp apricot jam
3 cups flavored breadcrumbs
Oil for frying
(optional: carrot to prevent burning)
Russian dressing for serving
Directions
1. Prepare 2 shallow bowls: 1 with breadcrumbs, and one with the eggs mixed with apricot jam
2. Layer a slice of salami over your chicken cutlet and dip into bread crumbs on both sides to coat
3. Then dip into the eggs on both sides to coat and then back into the breadcrumbs
4. Heat oil in a large shallow frying pan over medium heat (Add the carrot in if using)
5. Fry for 3-5 minutes on each side or until the chicken is cooked through
6. Serve with Russian dressing
