Hot Dog Goulash



2 onions, diced
5 tablespoons olive oil
2 tablespoons paprika
2 teaspoons white vinegar or a splash of dry red wine, optional
6 potatoes, cubed
1 (8-10) pack @abelesheymann K4P hot dogs, sliced into ½-inch coins. I added more cuz the hot dogs are our fave.
2 ½ – 3 teaspoons kosher salt
Freshly cracked black peppercorns or white pepper, to taste
Garlic powder, optional, to taste
1 ½ tablespoons tomato paste
1 tablespoon sugar
2 tablespoons ketchup

In a large saucepan or dutch oven heat oil over medium heat.
Sauté the onions until lightly golden.
Add paprika and stir for 10 seconds.
Deglaze the pan with vinegar or wine, if using.
Stir for 30 seconds.
Pour in 2 ½ – 3 cups water.
Add the raw cubed potatoes, salt, pepper, garlic powder, tomato paste, sugar, and ketchup.
Cook on low-medium heat for about 35 minutes.
When the potatoes are fork tender add the hotdogs and cook another ten minutes.
Adjust seasoning to taste.
