Salami Yapchik

 

Ingredients:

1/2 A&H Salami, cut into small chunks
3 Idaho potatoes, grated
1 onion, grated
3 eggs
1/3 cup oil
1 tsp. salt
1/4 tsp. pepper
In a small fry pan, saute the salami until golden. Either by hand or using a food processor, grate the onions and potatoes, add the oil, eggs and seasonings. Finish by adding the salami bits, stir to incorporate.
Place in an 8x8 dish and bake in a 400 degree oven for 1-1 1/2 hours until golden. Can be made into muffins, cooking time will vary accordingly.
